  • 11g bird’s nest, soaked until soft
  • 1 small kampong chicken (net weight 550g), cleaned
  • 1 tbsp sweet almonds (lam hung)
  • 1/2 tbsp bitter almonds (pak hung)
  • 5 red dates
  • 20g American ginseng slices
  • 1 litre hot water

Instructions

  1. Combine all the ingredients (except bird’s nest) in a pressure cooker. Bring to a boil over high heat until the pressure indicator is shown.
  2. Reduce the heat to the lowest and cook for 15 minutes. Turn off the heat and allow the pressure indicator to return to its original position before opening the lid. Add the bird’s nest and pressure cook again for a further 10 minutes.
  3. Remove from the heat and allow the pressure indicator to return to its original position before opening the cooker.
  4. Serve the soup hot.

2. Bottled Bird’s Nest Soup

Who knew that bird’s nest soup could also be made into a type of dessert? For this recipe, all you need with your uncooked bird’s nest is a couple of red dates or jujube, some slices of ginger that’s sliced thin, and a few rock sugar depending on your level of sweetness. Preparation and cooking time for this dish only takes a few minutes since there are minimal ingredients needed for it.

Ingredients

  • Bottled Bird’s Nest Soup
  • A few Red Dates (Jujube), a few slices of thinly sliced Ginger and a couple of block rock sugar (preference of sweetness).

Instructions

3. Braised Bird’s Nest Soup with Conpoy and Alaskan Crabmeat

4. Savory Bird’s Nest Soup II

This is a simple recipe and is a common Chinese recipe. It is because of the ingredients used that’s commonly used in Chinese cuisine like Shaoxing wine. However, like most bird’s nest soup recipes, it’s quick and easy to make at home with only ten minutes of cooking time. This recipe also adds minced ham for a mixture of meat flavors aside from chicken.

Ingredients

  • 2 ounces refined bird’s nest
  • 1 and 1/2 quarts homemade chicken broth
  • 1 Tablespoon Shaoxing wine
  • 1 boned chicken breast, minced
  • 1/4 cup minced Virginia ham
  • 2 teaspoons corn starch mixed with one-quarter cup of water
  • 1 egg white, lightly beaten
  • salt to taste

Instructions

  1. Cover bird’s nest with one quart of luke-warm water. Let it stand for one to two hours until bird’s nest is fully expanded, then drain off the water.
  2. Place bird’s nest in a bowl, add one quart of chicken broth and the ginger. Cover the bowl and place it in a steamer. Steam over boiling water at low heat for one and a half hours.
  3. Transfer the soup to a three quart sauce pan, add the minced chicken and ham and the remaining chicken broth. Boil over medium heat for two minutes.
  4. Add corn starch water and mix well.
  5. Turn off heat and stir in the egg white with constant stirring. Serve hot.

5. Steamed Sweet Bird’s Nest Soup

This is another dessert-type Bird’s Nest soup recipe in the list but requires more than just two ingredients which include coconut milk. However, like all other bird’s nest soup recipe, if you buy the best and silkiest strands, the better the outcome of the dish. Also, this recipe uses regular sugar instead of rock sugar.

Ingredients

  • 2 bird’s nests (2 ounces total)
  • 3 cups hot water, about 150 degrees F, or hot to the touch
  • 1/2 cup sugar
  • 3/4 cup coconut “milk” (see below)
  • 3 cups boiling water

Instructions

  1. Combine the nests and hot water in a bowl and allow to soak for 4 to 4-1/2 hours, or until they soften, loosen, and separate into strands. Rinse them well, drain them in a fine-mesh strainer, and then repeat the rinsing again, to remove any remaining impurities. Drain the strands well.
  2. Place the strands in a steam proof dish. Add the sugar and coconut “milk.” Then pour in the boiling water and stir to mix the ingredients well and to dissolve the sugar. Place the dish in a steamer, cover, and steam for 20 minutes. At this point, all of the ingredients will be well blended.
  3. Turn off the heat. Remove the dish from the steamer, transfer the soup to a heated tureen, and serve.
Coconut “Milk”

What I call coconut “milk” is the clear liquid found in unripe coconuts in the warm summer months. (Do not confuse it with the canned white coconut milk extracted from the grated flesh of mature coconuts.) Buy an immature coconut, cut off its top with a cleaver, and pour out the liquid. You should have about 1 cup. This coconut liquid, or water, has a natural sweetness. In fact, unripe coconuts, their tops cut off and straws inserted, are sold as refreshments by street vendors in Thailand and elsewhere in Southeast and South Asia. You can also buy this liquid, sweetened and unsweetened, in cans usually labeled “coconut juice,” “young coconut juice,” or “coconut water.” If you use fresh coconut liquid, use the amount of sugar specified in the recipe. If you use canned coconut liquid, reduce the amount of sugar to 2 tablespoons. Be sure to taste the liquid before adding any sugar.

6. Chinese Swallow’s Nest Soup with Rock Sugar

There is no limit to making recipes with bird’s nest. For this one, it’s another dessert-type recipe but takes a bit longer to make even if the only ingredient is bird’s nest and rock sugar. The prep time, fortunately, is only five minutes, but cooking time takes two hours and thirty minutes.

Ingredients

  • 2 ounces birds nests
  • 4 cups water
  • 7 to 8 tablespoons crushed rock sugar (or to taste)

Instructions

  1. To prepare the bird’s nests, soak in cold water for several hours or overnight. Rinse well. Go over the nests and pick out any loose feathers.
  2. Boil the bird’s nests twice by bringing a pot of water to a boil and simmering the bird’s nests for about 5 minutes. Drain and again add to a pot of water, bring to a boil and simmer for 5 minutes. Drain, rinse well and squeeze dry.
  3. Place the bird’s nests in the pot and add 4 cups water. Bring to a boil and simmer until the bird’s nests are quite soft (up to 2 hours). Add the rock sugar, stirring to dissolve.
  4. Serve the soup hot.

7. Bird’s Nest Soup with Ginseng

As the name of the dish implies, this bird’s nest soup is made with its main ingredient – ginseng. There are also numerous health benefits when taking ginseng with bird’s nest including stronger immunity, antioxidants, fight against cancer, and lower blood sugar. This bird’s nest soup takes about 10 minutes to prepare and 45 minutes to cook. Aside from ginseng, rock sugar is also used in this recipe.

Ingredients

  • 7 gram dried bird nest
  • 1-2 slices of ginseng

  • 1/2 cup water

Instructions

  1. Soak bird nest in cold water overnight.
  2. Use a double mesh or fine strainer to strain the soaked bird nest, and remove any impurity that you can see. You may need to tear the bird nest into smaller strips if they clump together.
  3. If you own a Chinese double boiling jar, place bird nest along with the rest of the ingredients into the ceramic bowl. Cook for 45 minutes to 1 hour. Serve hot.
  4. If you don’t own a Chinese double boiling jar, place all ingredients in a ceramic bowl and cover it with aluminum foil. Place a metal rack/steamer rack inside a pot, place the covered ceramic bowl on top of the rack. Pour enough hot water to partially submerge the bowl. Cover the lid, and simmer for 45 minutes to 1 hour. Serve hot.

8. Steamed Bird’s Nest Soup

Last but not the least, the Steamed Bird’s Nest Soup is the most popular way of preparing using Bird’s nest. This recipe includes cured ham and egg whites to give a meaty and savory flavor while enjoying the health benefits of Bird’s nest. This is also very easy and quick to make since prep time is only 10 minutes, while cooking time only takes 8 minutes.

Ingredients

  • 1 tsp (5 mL) Cooking oil (canola or vegetable)
  • 4 Egg whites
  • 8 1/2 oz (245 g) Bird’s nest (bottled, “ready to serve” bird’s nest is recommended)
  • 8 Parsley leaves
  • 3 cups (750 mL) Chicken stock
  • 1/2 tsp (2.5 mL) Salt
  • 1/2 tsp (2.5 mL) Sugar
  • 2 oz (60 g) Cornstarch
  • 1 oz (30 g) Minced, cured ham

Instructions

  1. Brush the inside of 8 pearl-shaped Chinese soup spoons with cooking oil.
  2. Stir the egg whites in a bowl and pour into soup spoons. Add ½ oz. of bird’s nest in each spoon and garnish with parsley leaves.
  3. Boil water in a large pot. Place the spoons on a rack above the water level in the pot. Cover and steam on medium to high heat for 5 minutes.
  4. The eggs will form pearl shapes. Separate them from the spoons and set them aside on a plate for later use.
  5. Boil chicken stock in a pot for 3 minutes and add 8 oz. of bird’s nest. (This is separate from the bird’s nest we added in step 2.)
  6. Add salt and sugar in the pot, and cook for another 30 seconds. Thicken with cornstarch and stir for one minute. Your soup is now complete.
  7. Divide the finished soup into 4 soup bowls, and garnish with 2 egg white pearls each (from step 4) and cured ham. Serve immediately.
